CHEESY RANCH POTATO BAKE

This is my favorite potato dish ever! It is perfect for any season, people of all ages love it and it pairs well with just about anything. I’ve served it with chicken, brats, steak, kabobs… seriously everything. All-in-all, this takes about 40 minutes to prepare and serves 6 people.

INGREDIENTS:

  • 3lbs baby red potatoes unpeeled
  • 1/2 cup ranch
  • 1 tsp garlic salt
  • 1 tsp fox point (my favorite seasoning I put on everything… literally)
  • Salt and pepper to taste
  • 1 1/2 cups finely shredded colby jack cheese
  • Green onion

DIRECTIONS:

  1. Preheat oven to 400 degrees and grease casserole dish, set aside.
  2. Wash and slice potatoes into approx. 1/2″ pieces.
  3. Fill a 5 Qt pot half full with salted water, bring to a boil.
  4. Add potatoes and cook at a low boil for 8-10 min (they should be easy to pierce with a fork when done).
  5. Drain potatoes well.
  6. Add garlic salt, fox point, salt/pepper, 1 cup of cheese and drizzle 1/2 cup ranch dressing directly into the pot with drained potatoes and gently toss (should be enough to coat potatoes evenly). Be sure to not mix too aggressively, you don’t want the potatoes to get mashed up!
  7. Transfer mixture into greased casserole dish. Bake uncovered at 400˚F for 20 minutes.
  8. Remove casserole and sprinkle the top with remaining 1/2 cup of cheese, return to oven for 2-3 min or until cheese is melted.
  9. Add some sliced green onion or parsley to garnish.
  10. Enjoy!

Feel free to add more salt/pepper if you want to, and some kids like a little ketchup on the side. But like I said, this is a crowd-pleaser at my house. I hope your family enjoys it as much as mine does!
